HAPPY LABOR DAY|| PECAN PIE RECIPE

Good morning, wonderful, amazing, sweet and lovely people. I am grateful for the grace to be alive today. I hope you are also. Today is a beautiful day. Welcome to Maryam's Joyful Life.

So, it is Labor Day in America and I am happy to make this post in honor of the amazing men and women in the workforce and business who keep the engine of society flowing. To teachers, nurses, doctors, first responders, military, builders, essential workers, business men and women, pastors, spiritual leaders, mothers and fathers, Thank you! Everyone who contributes to making the lives of others better, thank you! We are all in this together. May God bless and keep all of us In Jesus Name. Amen!

May the the Angels of peace, love, healing, joy, protection and abundance surround each and everyone of us now and forever, Amen!

Now let's make this day one of celebration for all.

Here's my favorite holiday pie recipe. Enjoy!

This recipe is from:  https://celebratingsweets.com/maple-pecan-pie/

Ingredients

Pie crust (or use your favorite 9-inch deep dish unbaked pie crust):

  • 1 ¼ cups all purpose flour, plus more for rolling out the dough

  • 1 tablespoon granulated sugar

  • ½ teaspoon salt

  • ½ cup chilled unsalted butter, cut into small cubes

  • ¼ cup ice water, plus more, if needed

Filling:

  • 6 tablespoons unsalted butter, cut into pieces

  • 1 cup packed light brown sugar

  • ⅔ cup pure maple syrup

  • ½ teaspoon salt

  • 3 large eggs

  • ¼ teaspoon maple extract OR 1 teaspoon vanilla extract

  • 2 cups chopped pecans, toasted, if desired*

  • non-stick baking spray

  • flaky finishing salt

Instructions

Pie crust:

  1. In a large bowl, combine flour, sugar, and salt. Add the cubed butter and use your fingers or a pastry blender to cut the butter into the flour, doing so until the butter is broken down into pea-sized pieces. Add ¼ cup ice water and stir with a wooden spoon or rubber spatula until the dough starts coming together. Then use your hands to bring the dough together. If necessary, add another tablespoon of cold water. The dough should just be sticking together. Try not to overwork it.

  2. Transfer the dough onto a piece of plastic wrap. Flatten it into a disc and wrap it up. Roll the edges of the crust on the countertop (like a wheel) to smooth out the edges. Transfer to your refrigerator for 1 hour (or up to 2 days). Note: If you're planning on toasting your pecans, now would be the time to do it.

  3. Let the pie crust sit at room temperature for several minutes until it is no longer rock-hard, but still cold (this will depend on how long it was the fridge). Roll out the dough on a floured surface until it is a 12-13 inch circle.

  4. Lightly spritz a 9-inch deep dish pie plate with non-stick spray, then transfer the crust to the pie plate. Trim and fold/crimp the excess crust around the edges. Place the crust in the refrigerator for about 20 minutes while you prepare the filling.

Filling:

  1. Preheat oven to 350°F. In a saucepan over medium heat, melt butter. Add brown sugar and maple syrup and whisk until smooth and combined. Bring the mixture to a low simmer (bubbles forming around the perimeter of the pan), then remove from the heat. Pour the mixture into a bowl to cool for 15 minutes.

  2. Add eggs, salt and extract to the syrup mixture, whisking until combined.

  3. Sprinkle the chopped pecans in the bottom of the uncooked pie crust. Pour the syrup mixture over the pecans, rearranging the pecans if necessary. Lightly spritz a piece of foil with non-stick spray. Cover the pie with foil and bake in the center to lower third of the oven for 30 minutes. Remove the foil, then continue baking for another 15-25 minutes (approximately), until the edges are set but the center of the pie is still a bit jiggly (like gelatin). Sprinkle the top of the pie with a few sprinkles of flaky finishing salt. Place the pan on a wire rack to cool completely, then transfer to the refrigerator. Serve at room temperature with Tillamook Old Fashioned Vanilla Ice Cream.

How To Make Maple Pecan Pie:

  1. Line a pie plate with a standard pie crust (use my homemade recipe or your favorite pie crust). Place the pie crust in the refrigerator while you assemble the filling.
  2. Heat butter, brown sugar and maple syrup in a small saucepan until smooth and combined.
  3. Whisk eggs, maple extract, and salt into the syrup mixture.
  4. Sprinkle pecans over the bottom of the unbaked pie crust, then pour over the liquid mixture.
  5. Cover with foil and bake for 30 minutes, then remove the foil and bake for an additional 20 minutes.

I hope this inspired you. I love eating pecan pie during the holidays with a scoop or two of vanilla ice cream and it always does the trick.

Thank you for checking out my blog today. Have a delightful Labor Day!

SHARING MY 2020 CHRISTMAS MENU

What's up wonderful, amazing, sweet and lovely people. How are you all doing today? I hope you're all having a great day today and are not letting anyone steal your joy. Welcome to Maryam's Joyful Life. Today is a beautiful day. Thank you for checking out my blog today. I appreciate you with all of my heart.

So it's 3 days to Christmas and my birthday. I am so excited for this year. Life has been one colorful ride for me this year. I have had many downs and ups but the ups have far outweighed the downs that I am still in shock of the goodness of God in my life.

Had no idea that I was a popular blogger or that what I did really mattered until this year. My spiritual eyes opened this year and my intuition is at diamond peak. I am truly amazed at the changes.

This year, I celebrate my birthday and Christmas with Jamaican cuisine. I love Jamaican food. My sweet Zozo does too. So, it was a no brainer to prepare a Caribbean style menu for Christmas/My Birthday lol...

Here are the things on my menu this year:

Jamaican Oxtail

This delicious looking oxtail stew is from https://www.saveur.com/braised-oxtails-recipe/ my mouth is watering just looking at this picture.

Rice and peas

This delicious dish was made by https://www.grillingcompanion.com/recipe/jamaican-rice-peas-recipe/ I can't wait to cook mine.

Fried Plantain

I love fried plantains and can't wait to cook some for Christmas and my birthday. This eye-catching fried plantain is from https://cooking.nytimes.com/recipes/1020517-maduros-fried-sweet-plantains

Vita Malt Coconut and Hibiscus Flavor

Have you tried this drink? It is absolutely amazing! I just tried earlier today and am super excited to drink more of it at Christmas.

Steamed Cabbage

Steamed cabbage is delicious. I really like steamed cabbage. It will be a great feast for sure.

African Hen

I bought 10 lbs of African hen. This picture from https://cuisine228.com/african-fried-chicken/ really captures the spirit of my fried chicken plans. There's something about African free range chicken. You have to cook them for long time and fry them to a crisp.

Cake

I got my cake from walmart. It's a chocolate cake and I am looking forward to stuffing my face lol...

You can't have a birthday without a cake to go with it. I am so looking forward to my chocolate cake. My kids lol... are already asking for a slice of the cake and it's not even my birthday yet. I keep explaining to them that it's not time yet.

Finally, I will add a whole lotta LOVE to the special day!

Thank you for reading to the end.

Have a very Merry Christmas!

YOUR WEIGHT-LOSS JOURNEY DOESN'T HAVE TO BE BLAND|| Veggie Noodle Soup Recipe

What's up wonderful, amazing, sweet and lovely people. How are you all doing today? I hope you're all having an amazing day and are not letting anyone steal your joy. Welcome to Maryam's Joyful Life. Today is a beautiful day. Thank you for checking out my blog today.

Weight-loss doesn't have to be scary and boring. You don't have to eat tasteless and bland food in order to reach your goals. In fact, to lose weight, you can still eat what you like but in moderation and increase your physical activity .

The reason why most people never reach their goal is because they try too hard and apply hard-to-follow techniques that only work for a few people. Being a fitness and health enthusiast, I can tell you from experience that you can still eat what you love but in moderation and be able to reach your goal. I have to clear up some misconceptions though.

Dieting alone will not get you to your ideal weight. However, dieting in addition to increased physical activity to burn calories and fire up your metabolism will get you there anytime. By dieting, I don't mean eating tasteless and unappealing foods. I mean cutting down on the amount of food you eat and substituting non-nutritional foods for nutritional foods. It takes discipline and commitment to stick with your plan and ultimately reach your goals. I believe you can reach your goal. There are days when you're going to feel like quitting but don't quit. Keep the picture of the person you want to become at the end of the journey on the screen of your mind.

Here's a recipe I think you might want to add to your list. Vegetable noodle soup!

My son and I just enjoyed a bowl of this delicious soup each. I tell you, it's very delicious. I find it fun to mix-up what I eat. I don't always eat meat. I love meat a lot but sometimes I just don't desire to eat meat. Yesterday was one of such days.

I decided to make this amazing pot of vegetable noodle soup. I am super excited to share the recipe with you.

What you will need:

1 pack egg noodle

1 teaspoon salt

a tablespoon of minced or chopped garlic

2 tablespoons of chopped onions

3 tablespoons of olive oil

a teaspoon of Weber's Kick'n Chicken Seasoning

A sprinkle of Ground black pepper

A teaspoon of Knorr Beef

2 cups of water

1 Green Bell Pepper

1 Red Bell Pepper

Slice Bell peppers into four parts each and blend until coarsely blended with little bits of pepper still showing.

Get a saucepan or soup pot. Place on the stove-top at medium high heat.

Pour your olive oil into the pan. Let heat for about 2-3 minutes.

Add your chopped onions and garlic and let cook until onions are translucent.

Then add your blended Bell pepper mix. Stir until content mixes completely.

Add your water and all spices. Cover your pot and let content boil. This should be between 8- 10 mins.

Add your pasta and let cook for about 10 minutes. Turn off the heat and let simmer for 10 minutes extra.

Get your favorite bowl out and serve yourself. This is delicious.

The great thing about this meal is that it's very light and it satisfies your taste buds too. It's a very low calorie meal.

I hope this inspired you.

Have an amazing day.

With gratitude,

Maryam
